Shrimp Salad with Garlic Miso Dressing | The Missing Lokness

Last Saturday, Bryan and I went to see World’s largest rubber duck in San Pedro. The duck is more than a 100 feet tall. It is an art piece that has traveled around the world since 2007. While it was in Hong Kong last year, my facebook feed was filled with tons and tons of pictures of this rubber duck from all my families and friends. I hoped to get to see the duck myself one day. At last, the duck has arrived in Los Angeles. The duck is giant with a cute little face. We are glad that we got to see it. If you are interested, the duck will stay in San Pedro until Sept 9th.

Summer is almost over, but the weather is still pretty warm. My cooking desire usually is not very high during summer time, because my kitchen gets really hot, especially if I have my oven on. I sweat and sweat. I just don’t like it. Therefore, a cool meal without much cooking is my kind of summer dinner.

This shrimp salad is right up my alley. The buttery shrimps were filling and stuffing. The miso dressing is slightly sweet, umami and creamy. If you haven’t tried miso before, don’t be scared by it. White miso is mild and sweet, which makes great salad dressing. With the refreshing cucumber and creamy avocado, this salad makes me very happy. Serve this with some bread rolls, your dinner is ready. Enjoy!

Shrimp Salad with Garlic Miso Dressing 2 | The Missing Lokness

Shrimp Salad with Garlic Miso Dressing (Adapted from Pinch of Yum)

2 servings

Ingredients:

–   ½ tablespoon unsalted butter

–   1 garlic clove (minced)

–   ¾ pound shrimps (peeled and deveined)

–   dash of red pepper flakes

–   1 large avocado (diced)

–   ¾ English cucumber (peeled and diced)

–   5 ounce baby romaine or romaine

Garlic Miso Dressing:

–   3 tablespoons vegetable oil

–   3 tablespoons lime juice

–   2 tablespoons honey

–   1½ tablespoon white miso

–   1 small garlic clove (minced)

–   ¼ teaspoon salt

Directions:

  1. In a small bowl, add all the dressing ingredients. Whisk to combine. Taste and adjust. Set aside.
  2. In a medium pan over medium high heat, add the butter. Add garlic and shrimps. Add red pepper flakes. Cook for a few minutes on each side until the shrimp is cooked through and slightly golden brown.
  3. Place the romaine in serving bowls. Top with shrimps, avocado, and cucumber. Drizzle with dressing and serve immediately.

Tips:

  1. Use any greens you like, spinach, spring mix.
  2. White miso can be found in Asian supermarkets or some regular supermarkets.

    OMG–I didn’t know the ducky was coming to LA!! I must go and see it now…thanks for the heads up! And your salad looks so summer-perfect. Delicious and healthy all rolled into one…excellent!

      I think the duck will be out for this long weekend. Just make sure to check before heading out. The salad is very satisfying with the shrimps. As a meat lover, Bryan didn’t complain at all. 🙂

    Super cuuuuuute duck! It looks really nice in the second picture, with the bridge and sea. Nice shot!
    The salad looks so appetizing! I love shrimp and avocado, and used to mix them with mayonnaise. But the dressing in your recipe looks much more delicious and healthy!

      Thank you for the sweet words! Bryan was the photographer. He took those pictures. 🙂 The duck is indeed really cute! We bought a small version of the rubber duck home.
      I am sure you would enjoy this salad very much. The dressing is creamy and umami. You won’t miss the mayo after this.

    I have a small rubber duck too, but I’d like to see the real thing 🙂
    Yeah, I agree that a nice miso dressing will even taste better than mayo!

    I went and saw the duck when it was here in Sydney, Australia! So amazing how it travels around the world.. loving the look and sound of this shrimp salad too! Definitely need to recreate the recipe.

      Oh, you did! The Sydney background must be awesome! I wish they put the duck in a more representative place in Los Angeles. Oh well…

Happy Lunar New Year! 新年快樂! Other than “ Happy Lunar New Year! 新年快樂! Other than “恭喜發財 Gong Hei Fat Choy” (wishing you wealth and prosperity), the other new year greeting that Bryan loves to say is “大吉大利 Dai Gut Dai Lei” (good luck and may things go smoothly).

In Chinese culture, mandarin oranges are often present during Lunar New Year. The pronunciation of the word “桔” (mandarin orange) sounds very similar to the word “吉” (luck), so mandarin orange is a fruit that brings in luck & prosperity. My grandma always have multiple plates full of mandarins in her house.

In this year of ox, I wish you all good health, good fortune, happiness & have a sweet year like these sweet mandarins! 🍊🐮🧧

This pink sorbet is crazy easy to make that you just whisk everything together & pour into the machine. Easy breezy!

Bryan & I have been dreaming about these chicken t Bryan & I have been dreaming about these chicken tenders from Sesame Grill @sesamegrill_626 for a few days. These tenders are unlike any we had before. Crunchy crust, yet delicate & not too heavy. The meat is super juicy & soft. Very simple food, but really well executed! Sesame Grill was original a fine dining restaurant, they redid their menu because of the pandemic & started to sell tenders only. And that got really popular! Incredible story & hope they’ll continue do well. If you’re ever in the area, definitely check them out.

Char Siu with Rice (叉燒飯) is a dish that I ca Char Siu with Rice (叉燒飯) is a dish that I can never get enough. Since I didn’t live close to a Chinese restaurant for a long time, I have been making my own for years. This week, I finally reshot the photos & gave a quick update for the recipe. Juicy & tender pork coated in a slightly sweet BBQ sauce, then top them over some hot steamed rice with a sweet soy sauce. Every bite is so satisfying!
