In a large pan over medium-high heat, warm 1 tablespoon oil and add the ginger slices. Cook for 1 minute. Add the chicken wings and cook until golden brown on both sides, about 5 minutes.
Add Coca-Cola, soy sauce, dark soy sauce, and sugar. Bring to a boil. Reduce heat to medium-low. Cover with a lid and cook for 2 minutes.
Remove cover. Turn the heat up to high. Reduce the sauce until slightly thicken, about 10 minutes, turning the wings every once a while.
In another large pan over medium-high heat, warm ½ tablespoon oil. Transfer the wings without the sauce to the pan and sear for 1 - 2 minutes on each side until the skins are a bit caramelized. Place the cooked wings on a serving plate. Serve immediately.
Notes
Dark soy sauce is not the same as regular soy sauce. It can't be substitute. You can find it in Chinese grocery store or from Amazon.
Keep a close eye on the wings for the last step. The wings can get burnt easily.
Serve the chicken wings with steamed rice as a meal.
Do not throw away the sauce. It's perfect with steamed rice.
