Strawberry Soda Float

This Strawberry Soda Float is the summer drink that you always dream about! Fresh strawberries, soda and a scoop of vanilla ice cream. 

Strawberry season is here! Red ripe fresh strawberries are the BEST! On Friday, Bryan and I took my Hong Kong friends, who are visiting Los Angeles, to a strawberry farm. Strawberry picking is a rare thing in Hong Kong, so we were all really excited. There were tons and tons of ripe strawberries. We filled up our baskets quickly and we ate plenty of strawberries too! So fresh!

It didn’t take me long to figure out what I want to do with the strawberries. It is a soda float. While in Osaka, we went to a character cafe. I adore many cartoon characters, like Doraemon, Winnie the Pooh and Pompompurin. So when I knew there is a Pompompurin Cafe in Osaka, I beg Bryan to go with me. Pompompurin is one of the characters from Sanrio. It is a yellow dog with a beret that looks like a custard pudding. Enter the cafe felt like entering to another world. Everything either looks like Pompompurin or related to Pompompurin. The food is the same too. Super adorable! Even though most of the food are not very memorable, we absolutely love the soda floats. We got a strawberry one and a mango one. They don’t taste artificial! It was refreshing and delicious!

Here I am at home and I really want to recreate that amazing strawberry soda float. This drink is very easy to make and you only need a few ingredients. First, prepare the strawberry syrup. Cook the strawberries and sugar until combined and slightly thickened. Let it cool and chill. When ready to use, add the syrup to glasses, pour in club soda and top with vanilla ice cream. YUM! This sweet and cool drink is excellent for summer time and anyone can enjoy it!

*PS. The little pompompurin cup is a free souvenir from the cafe when you buy certain food. Isn’t it cute? 🙂

Strawberry Soda Float

Course Drink

Ingredients

  • 16 ounces cold club soda
  • 2 scoops vanilla ice cream

Strawberry Syrup:

  • 12 fresh strawberries (rinsed, hulled, and cut into ¼-inch cubes)
  • 5 tablespoons sugar
  • 2 tablespoons water

Instructions

  • 3 hours ahead, in a medium pot over medium heat, add strawberries, sugar and water. Bring to a boil and reduce to medium-low heat. Cook until the strawberries are soften, about a few minutes. Remove from heat and cool to room temperature. Once cooled, transfer to a small bowl and cover with plastic wrap. Keep in the fridge for 2 hours.
  • In 2 tall glasses, place half of the syrup in each cup. Pour 8 ounces of club soda into each cup. Mix with a spoon. Top each drink with a scoop of vanilla ice cream. Serve immediately.

Notes

  1. If you have crushed ice, you can add some too. Ice cream will go on top of ice.

    Pompompurin is adorable (and a cafe with all Pompompurin food sounds so fun), but your float looks way better than theirs! Pretty and refreshing!

      Yes, pompompurin is chubby and cute! You got to visit a character cafe when visiting Japan! I think there is a Pompompurin cafe in Tokyo too! It will be fun! Thank you for your sweet words. 🙂

    This looks so gorgeous and how could it not be delicious. Love being inspired by travels. That cafe is beyond fun and your soda float does them proud. I’d be happy to have yours over theirs any day! And on the subject of strawberries – man, when they are good, they are just unbeatable. This coming from a chocoholic. ; )

      Thank you so much, Monica! Haha, the strawberries look so red and smell fantastic in farmers’ market. I couldn’t resist! If you ever get a chance to visit a character cafe, you really should. Your kids will love it!

Started off the year babysitting my sister’s dog, Started off the year babysitting my sister’s dog, Truffle. This little cutie is sweet, clingy, and so well-behaved. Even though it rained a lot, we still squeezed in short walks and quick lunch outings together.

He loves crunchy veggies like carrots and Napa cabbage. He is so smart when it comes to snuffle activities. We hid treats in a rolled-up towel and tied it into a knot. He untied and unrolled it in no time! 

Such a fun (and cuddly) way to kick off the year.
2025 is coming to an end! This year has been espec 2025 is coming to an end! This year has been especially full of family time for me. We were lucky to spend so much time with my parents, my mother-in-law, my sister, & my brother-in-law, and I’m truly grateful for all those moments.

Back to New York after 13 years! This time we visi Back to New York after 13 years! This time we visited during the holidays, and the city was beautifully decorated. Cold, festive, and buzzing.

We were there for Bryan’s work trip, so I wandered around on my own most days, and we squeezed in one half day to explore together. It even snowed lightly on our last day, which felt so dreamy! 

Of course, we ate so much good food. I tried to sample a little bit of everything: pizza, bagels, borscht soup, black and white cookie, gorgeous pastries, and even a Michelin-star meal. 

Our time was short, so there was still so much we couldn’t fit in. But that just means we’ll have to save it for next time.

1. Vessel w/ Christmas trees 
2. Taro & mochi lace batter donut (@papadamournyc) - crispy batter w/ soft chewy mochi & strawberry guava jam. Best thing we ate in NYC!
3. Empire State Building in fog 
4. Fried arroz negro, squid, and romesco (@estelanyc) - The rice has a toasted flavor & a bit crispy. Good seafood flavor & very unique. I love this dish! 
5. Black & White Cookie (@wgbergdesserts) - Soft cake like texture w/ a sweet frosting. Little sweet, but tasty. 
6. Christmas tree in Bryant Park Winter Village
7. Ukrainian borscht soup (@veselkanyc) - Made w/ beet. My 1st time trying Ukrainian borscht, very surprised that it tasted exactly like Hong Kong borscht. Delicious! 
8. Orange pastry (@salswee) - Orange mousse, orange coulis, almond sponge cake & crisp cocoa base. So good!

We spent Friday at Disneyland and Disney Californi We spent Friday at Disneyland and Disney California Adventure, and besides the rides, you know we ate a ton. Here are our Top 5 Favorite Foods from this trip:

1. Kublag Curry (seasonal)- A bit like Thai curry. Rich & flavorful, and seriously comforting! The shrimps are seasoned and cooked well. Ideal for a chilly winter day. (@ Docking Bay 7 Food and Cargo) 
2. Ronto Morning Wrap (breakfast) - Tasty, but not heavy. The eggs are soft and fluffy, the sausage is way better than a standard breakfast link, and the pita is good too. Warm & savory! My favorite breakfast item in the park! (@ Ronto Roasters)
3. Mickey-shaped Beignets - Cute, fluffy & hot! Not too sweet and totally gives New Orleans vibes. (@ Mint Julep Bar) 
4. Mickey Gingerbread (seasonal) - Always adorable, but truly delicious too. Soft, gingery, and one of my all-time favorites. I’d buy it even if it wasn’t Mickey-shaped. Be sure to mobile-order at 7am so they don’t sell out! (@ Jolly Holiday Bakery Cafe)
5. Prime Rib (seasonal) - Not the best ever prime rib ever, but surprisingly good! Tender,  well seasoned and served w/ fantastic mashed potatoes. If you want something hearty & satisfying, this is a winner. (@ Lamplight Lounge)

BONUS: 
1. Lumpia - Right next to the dole whip stand. Lately, every time we grab a dole whip, we also get lumpia. Crispy, meaty, & hot! A bite of lumpia followed by a spoonful of dole whip is the perfect balance. (@ The Tropical Hideaway)
The Best Apple Crumble. The ultimate comforting de The Best Apple Crumble. The ultimate comforting dessert for the holidays. Tender apples, warm cinnamon, and a buttery crumble topping. Served with creamy ice cream, of course! I made this for my parents when they were in town. Since my mom isn’t a fan of cinnamon, I baked one without it, and honestly? Still absolutely delicious. With or without cinnamon, this crumble is a winner!

Apple Syrup. We went apple picking w/ my parents w Apple Syrup. We went apple picking w/ my parents while they were in town, and drinking fresh apple cider inspired me to make this syrup. It’s sweet, a little tart, mildly spiced, & bursting with concentrated apple flavor. Perfect for coffee, tea, cocktails, or mocktails! Even just w/ sparkling water for a crisp, refreshing apple soda. So simple, yet so good! 🍎
