Easy Mango Smoothie

When summer is here, I always think of this mango smoothie (芒果奶). My mom used to make this for my sister, dad and I in summer. My mom was a high school teacher before retiring. Every morning, she left home at 6am. We usually didn’t get to see her in the morning, and we had toasts and breads for breakfast mostly.

During summer time, my mom had vacation and she got to stay at home. She would make breakfast for us sometimes. Mango smoothie was one of those special treats that we all love. The ripe and sweet Carabao mangoes are blended with some milk and ice cubes. It is cold, smooth and creamy. A wonderful summer drink only takes less than 5 minutes to make! I know you will love this too!

Easy Mango Smoothie

2 glasses

Ingredients:

–   3 ripe Carabao/Manila mangoes

–   1 cup whole milk

–   5 – 6 ice cubes

–   sugar (if needed)

Directions:

  1. For the mangoes, wash them under water and dry them with paper towels. To remove the flesh of the mangoes, hold one mango with one hand and stand it on its end. With a sharp knife in the other hand, cut from the top of the mango, down one side of the pit. Repeat with the other side. Now, you have three pieces (two halves and the pit). Lay one half of mango on the table with the flesh facing up, use a spoon to scoop out the flesh. Place the flesh into a blender. Repeat with the rest of the mangoes.
  2. Add the milk and ice cubes into the blender. Blend until smooth. Taste with a spoon. If the smoothie is not sweet enough, adjust with sugar to your own taste. Blend again. Pour the smoothie into 2 serving glasses. Serve immediately.

Tips:

  1. My mom also makes this smoothie with papaya too. That is my dad’s favorite. You can use banana too.

    I love mango and anything with mango… but not a long ago I became allergic and can’t eat it anymore (my throat got swallen and I was eating the same kind of mango that I’ve been eating…). I’m SUPER jealous of your delicious smoothies. I should have enjoyed it more. :'(

      That really SUCKS! It is hard to understand how you became allergic to mango all the sudden. That reminds me of my sister. After she came to the US, she becomes allergic to certain kind of shrimps. We think it may have to do with a specific breed.
      Anyway, I feel your pain! Sorry 🙁 At least for this recipe, you can substitute with banana or papaya. They are all good.

This soup starts with roasted kabocha squash & thyme, blended w/ onion, garlic, & chicken broth until silky smooth. Topped w/ crispy pancetta, a drizzle of cream, & fresh thyme. Next-level beef bowl!🥩🍚 Red Rock is now open Next-level beef bowl!🥩🍚 Red Rock is now opened at The Shops at Santa Anita. It’s a cozy spot w/ only about 14 bar seats, but we’re thrilled they’re now on this side of town. This Japanese restaurant first opened in Torrance in 2017, & we’ve made the trek there a few times. Now? Way more convenient! 

Their claim to fame is the sliced beef don. A rice bowl piled high with tender roasted beef, drizzled w/ sweet soy sauce & creamy yogurt sauce, then crowned with a rich raw egg yolk. In my opinion, the yolk is non-negotiable. It adds extra flavors.

While you’re there, don’t skip the croquette. Perfectly crispy on the outside, with a creamy, savory mashed potato center. Absolute comfort food.

Next time, I’m determined to try their omurice or curry… if I can resist ordering that beef bowl again.😅

If there is a salad that I can’t stop eating, it If there is a salad that I can’t stop eating, it’s this one, Burrata Salad w/ Marinated Tomato & Thai Basil. Creamy, bright flavors & no cook. I love how well the savory Thai basil pair w/ sweet cherry tomatoes, fresh cucumbers & creamy burrata. Amazing!

Cherry Granita w/ Mascarpone Cream. Refreshing Ita Cherry Granita w/ Mascarpone Cream. Refreshing Italian style shaved ice made w/ fresh cherries, & paired w/ a creamy mascarpone topping. It’s sweet, little tart, refreshing & creamy all at once! No shaved ice machine is needed. All you have to do is to scrape the fruit liquid with a fork every once a while. Favorite Breakfast Burritos. This is my copycat ve Favorite Breakfast Burritos. This is my copycat version of The Rooster’s Rico Suave burrito. Jammy fried eggs, crispy tater tots, smoky bacon, creamy avocado, melty cheddar & salty cotija cheese. And don’t forget the sauces, salsa de molcajete & cilantro crema. It’s hearty, filling & comforting! Yes, this is no doubt our favorite burrito!
