Bryan and I like to have breakfast for dinner, so I am always trying to come up with new ideas for breakfast. Other than eggs and toasts, this waffle recipe is probably pretty easy and good. These waffles were light and crispy. They were not heavy at all. When top with macerated strawberries and whipped cream, they were simply amazing.
Waffles with Macerated Strawberries (Adapted from Annie’s Eats)
4 – 5 waffles (2 servings)
Ingredients:
– ¾ cup all-purpose flour
– ½ cup whole milk
– ½ cup buttermilk
– 1/3 cup vegetable oil
– ¼ cup cornstarch
– 1 large egg (lightly beaten)
– 2 teaspoons sugar
– ¾ teaspoon vanilla extract
– ½ teaspoon baking powder
– ¼ teaspoon baking soda
– ¼ teaspoon salt
Macerated Strawberries:
– 1 cup fresh strawberries (rinsed, hulled, and quartered)
– 2 – 3 tablespoons sugar (depends on the sweetness of the strawberries)
– ½ teaspoon fresh lemon juice
Whipped Cream:
– ½ cup cold heavy cream
– ½ tablespoon sugar
– ½ teaspoon vanilla extract
Directions:
- In a medium mixing bowl, combine the flour, cornstarch, sugar, baking powder, baking soda, and salt. Whisk together.
- In another mixing bowl, beat the milk, buttermilk, oil, egg, and vanilla together.
- Add the dry ingredients to the wet ingredients and whisk until just incorporated and few lumps remain. Set aside and rest for 30 minutes.
- Meanwhile, in small bowl, combine the strawberries, sugar and lemon juice. Set aside at room temperature for 30 minutes.
- In a medium mixing bowl, beat the heavy cream with an electronic mixer until it starts to thicken. Add sugar and vanilla extract. Beat until it holds soft peak. Set aside.
- Preheat the waffle maker. Fill the waffle maker with the batter and cook according to the manufacturer’s instructions. Cook until golden brown. Serve immediately with the strawberries and whipped cream.
Tips:
- For the waffles, I like to keep the cooked one on a cooling rack while making the others. Therefore, the waffles will not turn soggy when they are on a plate.
- If you don’t like strawberries, just serve the waffles with syrup and butter.
- By macerated strawberries, the sugar and lemon juice will draw out the liquid of the strawberries and create syrup.
