I tried grilled pineapple in a Brazilian restaurant, and I fall in love with it. Luckily, I found this recipe online. Now, I can make this all the time. It is a great side dish with steak. The sweet pineapple balanced out the meaty steak. It was easy to make and delicious.
Grilled Pineapple (Adapted from Daily Unadventures in Cooking)
– 1 pineapple
– ¾ cup brown sugar
– 1 tablespoon ground cinnamon
- For the pineapple, lay it on its side and remove ½-inch of the top and the bottom. Turn the pineapple upright on its base. Cut the skins off in long strips. With a pairing knife, remove all the eyes. Cut the pineapple in quarter lengthwise. Remove the core from each pineapple quarter.
- In a Ziploc bag, combine the pineapple quarters, brown sugar, and ground cinnamon together. Marinate for 15 minutes.
- Heat the grill up over medium heat. Grill the pineapple quarters until grill marks appear, about 2-3 minutes per side. Serve immediately.
